Three congregations (we call them “wards”) meet in our church building on Sunday, and each year our wards are assigned a different time. Some years church has been at 9:00, or worse—8:30 am. As a single mom (and even as a wife of an airline pilot), getting three kids clean and dressed—which all my kids mysteriously forget how to do on Sunday—before 9:00 is insane.

Luckily for us, this year our ward meets at 1:00. You’d think with so much more time we’d always be on time, but sadly, no. It could be due to the fact that since I think we have a lot of time, we dawdle a bit. Well, more than a bit. Usually my kids get out every stuffed animal in the house to play school, then they get out every chair and blanket to make a tent village. Then they yell at each other. Then I try not to yell at them to stop yelling (I usually fail).

Some weeks, though, I get the idea to make a big breakfast, thinking that when we sit down at the table, we’ll all be laughing and smiling and saying nice things to each other. Last Sunday, for example, I made these pancakes. I can’t say anyone was laughing and smiling and saying nice things to each other, or even that we actually sat down together to eat them. But they were good. And worth blogging about.

Now, normally I don’t do anything for the blog on Sundays because that would be insane. But these pancakes looked so beautiful, I had to photograph them, all while calling things like, “Go take your shower!” and “Are your shoes on yet?”

Well, I guess it was worth it. Though we didn’t get to church on time, we did manage to find a seat. And we got a whole new pancake recipe out of it. We hope you like it, too.

whole wheat oatmeal pancakes

1 cup whole wheat pastry flour
2/3 cup quick oats
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
1 tablespoon brown sugar
1/2 teaspoon ground cinnamon
1 1/2 cups buttermilk
3 egg whites

1. Combine dry ingredients in a medium bowl. Whisk together wet ingredients in a separate bowl, and then whisk into dry ingredients. Batter should be a little lumpy.

2. Heat up a nonstick skillet over medium heat. Grease with a small amount of oil and butter. Drop 1/3 cup of batter in the oil and cook until little bubbles form around the edges, and pop but don’t refill with batter. Turn over and cook for thirty seconds more. Place in a 200 degree (Fahrenheit) oven until ready to serve. Serve with real maple syrup.

    11. These look beyond delish! I cannot wait to try them. We are always trying to add more oatmeal into our diet, truth be known – sometimes it’s in cookies! This looks much healthier but just as good!!

      Been looking for low gluten healthy pancakes for my grandson… This one sounds like it wounld be good. I’m going to use whole wheat pastry flour to lower more gluten,and go organic.. Hope it works out, as good as these look..
