You are disappointed with s’mores because you are using the marshmallow method.

What you should do is assemble the cold s’mores, then wrap the whole thing in tin foil, so you create a little package. Then either put them on the grill over the fire pit, or prop them over the embers with a couple of sticks.

It melts the chocolate and the marshmallow at the same rate, resulting in the s’more of your dreams!

I tried these and they were absolutely delicious. My marshmallow frosting didn’t get as thick as it looks in the picture..but nevertheless SO YUMMY!

I’m not sure what I love more about this recipe. That is takes a childhood favorite and makes it all grown up, that it involves meringue (my favorite sweet treat ever), that it’s measured in weights too (yay!) or that it actually looks like I can fool myself into thinking it’s somewhat healthy.

I can’t wait to try this.
