I think this looks absolutely delicious, but I will probably never try making it because my kids are such food wimps. I have been trying for a long time to get them to eat more “sophisticated” food (aka anything other than nuggets, mac n cheese, or hot dogs), but I can’t seem to break through their set ways. Do you have any suggestions for encouraging my kids to be more “well-fed”?

I made this tonight, and it turned out GREAT. As my husband said, its not quite “thai” — but its got some great flavors. I’ll definitely make it again.
