The real trick to have a great caprese-panzanella-salad like this is being able to spend freely on the best mozzarella you can find. My advice is getting some buffalo mozzarella (http://en.wikipedia.org/wiki/Buffalo_mozzarella). It makes a world of difference, believe me ;) It looks wonderful and refreshing.
