Pineapple Inside-out Cake
Our first son had his first birthday one month after we moved away from Hawaii, so we missed having the traditional first year birthday luau there. When we came home, we had no money, no furniture, and nothing to cook with. We had left everything on the island. I have to say, the birthday we came up with was ingenius, considering the limitations. We decided to throw a Hawaiian beach party. We decorated the main room of our apartment with colored craft paper cut like ocean waves and wrapped around our newlywed torchier lamp like a palm tree. For lunch, we cooked hot dogs like the ones our favorite street vendor made in Kona, and for the cake I wanted a pineapple upside down cake. So I made three, stacked them , and frosted them with cream cheese frosting–et voila: a pineapple inside-out cake!
I believe in cream cheese. And I imagine most people are with me on that. Most vegans miss it (I know I did when I was a vegan for six weeks.
