This is just a quick salad I threw together to go with the sloppy joes. I love how light it is, and with the cucumber sliced in ribbons, it’s much more tender than a regular cucumber salad—it almost provides the same satisfaction as eating a bowl of pasta.

1 English cucumber
2 tablespoons rice vinegar
3 tablespoons Vegenaise
pinch kosher salt
3 teaspoons sugar
1/4 teaspoon dry dill (or 2 teaspoons fresh dill)

Slice the cucumber longways with a vegetable peeler to create long, wide ribbons. Whisk remaining ingredients in a medium bowl, and add in the cucumber. Toss to coat and garnish with chopped chives, if desired.

      I followed this recipe and to be honest it was TERRIBLE. The main flavour was mayonnaise which was very unpleasant. Maybe you could improve it by using sour cream instead of mayonnaise and perhaps using regular vinegar instead of rice vinegar for a stronger taste.

    21. Hannah–It may have to do with the type of mayonnaise you used.
