This is a such a simple chicken salad, it’s not really worth posting, but I wanted to give you at least a little inspiration for the chicken that results from the chicken stock recipe. I’ll make a more interesting one soon.
simple chicken salad
1 pound cooked chicken, cut into small pieces
2 tablespoons mayonnaise
2 stalks celery, finely chopped
salt and pepper
whole wheat toast
butter lettuce
yellow and orange tomatoes
1. Combine chicken, mayonnaise, celery and salt and pepper to taste.
2. Spread on toast, and top with lettuce and tomatoes.

Never thought to use a whole chicken to make the stock. (LIke I ever make stock).
But, I might try to one day if I need to impress someone with my culinary skills!!!

I need to get back into roasting chickens every couple of weeks! My stock supply is low, and we do enjoy the chicken salad and other meals I make from the leftover roasted chicken. Thanks, for the inspiration!
