I was compensated by Tyson Foods to produce this post. I’m kind of loving the new look of my blog. It’s a little cleaner, a little lighter, and it was long overdue. Sometimes I think being a little lighter myself is long overdue. I really want to look fabulous this summer. The kids and I have a limitless water park pass right now, which means I’ll be in my bathing suit a lot in the next couple months. And I’d rather that were a pleasant experience for the other water park patrons. With school out, and with the weather reaching ninety-five degrees every day, it already feels like summer, but lucky for me, the “Countdown to a Better You” program isn’t quite over, which means I technically have about a week (until June 21 (aka the first day of summer) to get looking my absolute best. And it also means there’s still time to send in the UPC codes from Tyson® Grilled & Ready® products to collect some great prizes! Just remember to visit Facebook.com/GrilledandReady , and click on the “Treat Yourself” tab to register. In case you aren’t quite up to speed, the “Countdown to a Better You” is a program Tyson Foods came up with to motivate people to look their best this summer by encouraging them to eat smarter by incorporating their lean beef and chicken into their meals. These spring rolls are a great way to keep a cool kitchen and still put together something beautiful, filling, and nutritious for the family. Since I used the Tyson® Grilled & Ready® chicken, I didn’t have to heat up the oven or one single pan. That’s a plus, especially since spring rolls take a [...]

I was compensated by Tyson Foods to produce this post. Some of you may be wondering where I’ve been for the last little bit. I have to admit, I’ve been wondering the same thing myself. Things have been a tad insane around here. Summer vacation just started for my kids last week, I’ve been doing quite a few books signings for my new book, I’ve been helping my good friend Julianne Donaldson with her new book Blackmoore (which comes out this comes out this fall), and I’ve been going out with some very nice people on the weekends. I’ve had very little time to cook, and with the weather getting so warm, I don’t even really want to cook. Do you ever get that way? One night last week, the kids and I got home after eight o’clock—I can’t even remember which night it was—and my daughter really wanted some Buffalo wings. I didn’t know how I was going to defrost some chicken and then cook it before it became ridiculously late, but then I remembered I had some Tyson® Grilled & Ready® chicken chicken in the freezer. All I had to do was pour some of the already cooked chicken into a skillet, heat it up, and pour my favorite wing sauce into a little bowl. The kids just dipped the chicken in the sauce, and it satisfied my daughter’s Buffalo wing cravings. I was then able to send them off to bed at a decent hour. I believe that’s what they call a “win-win.” Tonight, we were pressed for time again, so I brought out the Tyson® Grilled & Ready® chicken. I had been on a date this morning, and had eaten the [...]

Okay, so I wanted to just quickly post the salad we had tonight for dinner before I forget. I had a version of this at my friend Erin’s house this weekend. This is the same friend who used my facebook account this week to announce to everyone she is my favorite person in the whole world, and that I am in a relationship. It reminds me of this girl I met at a party once who kept receiving phone calls throughout the evening because her friend had pranked her by posting her number on Craigslist saying she was giving away free goats. Anyway, Erin made a killer salad, which I decided I needed to repeat and show you here. I cooked the quinoa by following the instructions in Gwyneth Paltrow’s new book . I had heard a bunch of bad reviews of the book, but I decided to dig deeper since I loved her first cookbook so much and couldn’t imagine her ever producing something un-fabulous. Turns out, my instincts were right. It’s a wonderful book. I’ve already tried three recipes that were amazing, and I plan to talk about the book more soon. quinoa salad with zucchini and artichoke hearts 1 cup quinoa 1 3/4 cup water pinch of salt 2 teaspoons olive oil 1 small zucchini, chopped 1 small jar of marinated artichoke hearts (the kind with the oil and vinegar in the glass jar) 1 skinless boneless chicken breast, cooked and chopped (my favorite way to cook chicken is here ) 6-7 olives (whatever kind you have), sliced 2 tablespoons feta, crumbled 1 cup fresh spinach, chopped 1 tablespoon balsamic vinegar 1. Use a fine mesh sieve to rinse quinoa. Add quinoa and water [...]

So, a lot of you may have heard . . . my book came in the mail yesterday. AAAAHHHHHHHHHH!!!!!!!!!!! Yeah, I’m a little excited. This is my first one, and I’ve been planning and dreaming about this day for over a decade. I couldn’t have gotten it published without all of you, my readers, so thank you, thank you, thank you! for being there for me, post after post!! I love you!!! I thought I’d post this salad today, as a sort of retraction for a part of my book. (That was quick!!) Let me explain. In my book, in the chapter called “Concert on the Green,” in a lead-in for Mukimame Succotash, I wrote that I don’t like lima beans—fair enough. They’re kind of starchy and flavorless. In fact, I think a lot of you may have my back on this. Fast forward to a couple weeks ago, when I saw a can of Bush’s Butter Beans at the store. “Butter beans,” I thought. “What are those?” I knew I needed them right away. I bought some, and when I opened them, I started eating them, right out of the can. They were the smoothest, richest, most comforting healthy thing I’d ever tried. And they came from a can! I was hooked. When I went to write the recipe for this salad today, though, I knew I had to be able to tell you what a butter bean actually is. And guess what I found out! They’re lima beans!! They’re just lima beans that are grown to maturity, and dried. You cook them like regular beans. So, since writing the book, I have discovered I do, in fact, like lima beans, just not the [...]

I’m what people consider an Anglophile (don’t you hate words that end in -phile?). I love Downton Abbey . . . Ben Barnes . . . Charlie Hunnam, all recent super hero casting choices . . . I love the English countryside, and how beautiful it is to see one solitary tree on a hillside meadow dotted with white sheep. I love C.S. Lewis and fairytales. I love Bath; I love Jane Austen novels. I know that if I could start my life over again, I would spend at least a year or two in Oxford after I graduated from college, just in case some ruddy cheeked footballing graduate student wanted to fall in love with me and start a family. This recipe is for any of you who are like me. It’s very simple, it originated at the school attended by Prince William and Lord Grantham , and it’s absolutely delicious. Or perhaps I should say brilliant. Nigella Lawson taught how to make Eton Mess on one of her shows and explained the reason for its name is that the school boys at Eton would sort of “mush up everything together in their pudding.” That sounds like a perfect dessert to me, and here is how to make it: eton mess balsamic strawberries (recipe is found here.) 1 1/2 cups heavy cream 1/4 cup powdered sugar 1 teaspoon pure vanilla extract 6-7 meringue cookies, crushed In the bowl of an electric mixer fitted with the whisk attachment, whip cream with powdered sugar and vanilla until soft peaks form. Fold balsamic strawberries and crushed meringues into the whipped cream. Spoon into serving bowls or glasses.

It is now two weeks after New Years, and I think we can safely say the holidays are over. I tend to come up with an excuse every day in January that conveniently pushes back the end of the holidays and my resolution to eat healthy and get fit. But it is best to ease into things, right? This is a recipe I came up with ages ago, actually, and have wanted to share it with you. Julie helped me come up with the idea when she told me about a similar smoothie she makes for her kids that has bananas and oatmeal in it. It sounded like the ingredients you would put into banana bread, so I added walnuts to the recipe, and dates as the sweetener. My friend Jon filmed and directed me in a little video where I show you how to make it: What do you think? Go ahead, be honest. And here is that recipe. banana bread protein shake 8-10 ounces warm water 2 dates, pitted 1/4 cup oatmeal 1 scoop protein powder (I use raw, vegan protein powder, but you can use whatever you want, or just leave it out.) 1/4 cup raw walnuts 1/4 teaspoon ground cinnamon 1/4 teaspoon pure vanilla extract 1 ripe banana 1 cup ice cubes 1. Combine all ingredients except for ice in a blender until very smooth. 2. Add in ice cubes and blend until ice is completely crushed and mixture is smooth.
