I was compensated by Tyson Foods to produce this post. I’m kind of loving the new look of my blog. It’s a little cleaner, a little lighter, and it was long overdue. Sometimes I think being a little lighter myself is long overdue. I really want to look fabulous this summer. The kids and I have a limitless water park pass right now, which means I’ll be in my bathing suit a lot in the next couple months. And I’d rather that were a pleasant experience for the other water park patrons. With school out, and with the weather reaching ninety-five degrees every day, it already feels like summer, but lucky for me, the “Countdown to a Better You” program isn’t quite over, which means I technically have about a week (until June 21 (aka the first day of summer) to get looking my absolute best. And it also means there’s still time to send in the UPC codes from Tyson® Grilled & Ready® products to collect some great prizes! Just remember to visit Facebook.com/GrilledandReady , and click on the “Treat Yourself” tab to register. In case you aren’t quite up to speed, the “Countdown to a Better You” is a program Tyson Foods came up with to motivate people to look their best this summer by encouraging them to eat smarter by incorporating their lean beef and chicken into their meals. These spring rolls are a great way to keep a cool kitchen and still put together something beautiful, filling, and nutritious for the family. Since I used the Tyson® Grilled & Ready® chicken, I didn’t have to heat up the oven or one single pan. That’s a plus, especially since spring rolls take a [...]

My friend had a little heart to heart with me last week. He said I should share a little bit more of myself in my posts, a little bit more of my story. So, here goes—just hope he doesn’t mind he kind of is the story . . . One of my best friends in the entire world moved away this week. I first met Jon when I was still in high school. He had just been hired to be the anchor for the nightly news in Boston, and he and his wife and children went to church where my family went to church. Looking back, I’m not sure if it was because he was on TV, or because I possibly had a little crush on him that I never admitted to myself, but I remember just about everything he ever did, like when he blessed his baby Jonny in front of our congregation, or when he interviewed Gordon B. Hinckley (the prophet in our religion), or when he made a public apology at church for having used the phrase “damned Yankee” on the news. I once asked him who wrote his material. He told me he did, usually in the few hours before they went live. I couldn’t believe a person could think that fast, let alone write that fast. I would have been less impressed if he had told me he was a rocket scientist. About two years after moving to Boston and settling into the beautiful home they had built, he and his family relocated across the country, and that was the last I had heard of him. Then last summer, I was working on some professional goals, and had some questions about [...]

I need to drum up some serious positive thinking, ‘cuz I just came down with something and right now I feel like a blunt awl is tunneling into the left side of my skull. Positive thought #1: Good thing I made this chicken soup for the kids last week. They had all taken the week off from school, with their little faces glued to shows like Kickin’ It and Good Luck Charlie, so they could get rid of this fever and sore throat they all had. They never ate (drank, whatever you insist on saying) the soup, so now I still have a big pot of it for me. Positive thought #2: On Saturday night, when I was watching a movie with some friends, I started aching all over my body and shivering. I knew had caught what my kids had. Oddly enough, I kind of like fevers—they mean I have a provable illness and can take time off and no one will judge me—but the headaches that come with them . . . they’re maddening. (In case you missed the positive thought in there, it was the bit about taking time off.) Positive thought #3: The people at Muir Glen sent me samples of their amazing tomatoes awhile ago, and I used them for the soup. And I’ll totally be talking about them again soon. Positive thought #4: I awoke this morning to find my friend Jon shoveling my walkway at 7:15. I have good friends. Positive thought #5: The snow we got last night finally cleared out all the pollution that’s been hanging out in the valley for over a month, and now it’s sunny. Positive thought #6: Another friend sent me the [...]

Have you seen the latest November issue of Martha Stewart Living yet? I’m quoted in the Kashi ad for their Original 7 Grain Sea Salt Pita Crisps. Here is what I said about them, along with a little recipe for that mediterranean salsa: Eating healthy always tends to present a challenge for me, especially as a food blogger. When I write a post on something naughty . . . let’s say, for example, those maple bacon pecan bars, I have a tendency to opt for the naughty food over regular meals. There’s a crazy part of my brain that thinks that since I made the maple bacon pecan bars, then I am somehow entitled to every . . . last . . . one. And furthermore, why would I make a salad or throw together a quinoa dish when something is already in the fridge—right there, ready to be eaten? It’s all very dangerous. So lately, I’ve been trying to always have a grain salad or bean salad in the fridge—something filling and satisfying, and something I’ll reach for when I need food in a hurry. I’m always looking for something good to go with my favorite bean salads and hummus. Pita chips are the obvious choice, of course, but I’m not a fan of eating all that white flour. I recently tried Kashi’s Original 7 Grain Sea Salt Pita Crisps, and fell in love. Simple, and slightly salty, they’re the perfect complement to all my bean dips and salads. And since they’re whole grain, and not made with white flour, I know I’m doing something better for my body. This is my favorite bean salad I’ve come up with so far, and I made [...]

There is a grocery store here in Utah called Harmons that I will drive twenty minutes out of my way to visit. That may not sound like that far of a drive, but when you consider I pass at least eight other grocery stores, a Costco, and a Super Target on the way, those twenty minutes prove just how much I love it. I don’t make enough money to buy all my groceries there, and they don’t even have everything I could find at a Whole Foods, but their service is exceptional. It seems like everyone in there knows all there is to know about the food in their section. And there is always someone standing within five yards who can answer any of my questions. Oh, and don’t get me started on their Cheese Man. I don’t know that he knows that I call him that—apparently, his real name is Andrew—but he knows everything there is to know about cheese, and he deserves the distinction. Last week, I was there browsing (I like to browse at grocery stores. I once had a roommate flatmate from Australia who said this drove her CRAZY when we would shop together), and I was looking for something interesting. The kid in the produce section asked if he could help me, and I told him I was looking for fruit. He immediately suggested these honey tangerines (or Murcott tangerines), which are sweeter than other varieties, and suggested I put them in a salad. After some research on the internet, I found out that these tangerines only grow in Florida, and are available in the Spring. Here is the salad I made. red slaw with honey tangerines 1/2 red cabbage, [...]

I’m sure I don’t have to tell you the biggest occupational hazard of writing a cookbook is getting fat. I just added an hour walk to my daily routine, but even so, my body and my brain seem to think a plate of cookies for my book—whether the recipe passes or fails—should be scarfed down, with the best intentions of being better tomorrow. Mm-hm. Right. Last week, when I needed rescuing from junk food, I turned to Vegetarian Cooking for Everyone, by Deborah Madison. She has this one recipe called Curried Quinoa with Peas and Cashews, which was the first I ever tried from the book. It is so glorious and satisfying that every time I make it, I go through a phase where I seriously contemplate becoming vegan. And then I remember eggs and cheese, and then I think I should just be vegetarian. A few minutes after that, I remember how much I like steak, and I drop the whole idea. One day, maybe. quinoa and zucchini curry 2 tablespoons extra virgin olive oil 1 large onion, diced 2 teaspoons curry powder (I got mine at the Indian market, which is now out of business, so just whatever kind you can find) 1 cup quinoa, white or red, or mixed kosher salt and pepper 1 medium zucchini, cut into 1 inch cubes 1 cup carrot juice (Odwalla makes it, or you can juice carrots if you have a juicer) 1 cup frozen peas butter (optional) 1. In a medium saucepan, heat 1 tablespoon of oil over low heat. Add half of the onion, and saute until the onions are tender, about 8 minutes. Stir in 1/2 teaspoon curry powder, quinoa, and a pinch [...]
