		<description><![CDATA[Today is National Oatmeal Cookie Day. Can someone please tell me who decides these things? Lucky for me, I already have a recipe for oatmeal cookies ready to go. You know those No-bake Cookies? Some people call them Minute Cookies, and I&#8217;m sure there are other names I can&#8217;t think of right now. They&#8217;re made with cocoa powder and peanut butter, and I love them, but the other day, the kids wanted some and I was out of cocoa powder. I didn&#8217;t want them to just be peanut butter flavor, so instead I used cream cheese. At the last minute, I stirred in some chocolate chips so the mixture would have little bits of chocolate throughout. I even refrigerated them so that some of the chocolate bits would get crunchy. They were a huge hit. How do you like to make your no-bake cookies? Before I get to the recipe, I wanted to mention that the way I knew it was National Oatmeal Cookie Day was from a tweet from Zulka Sugar. They recently sent me a bag of their pure cane sugar, which is granulated, non-GMO unrefined Morena sugar made from freshly-harvested sugar cane. We love it for everything we bake, and also for sprinkling on oatmeal or in herbal tea. 		<description><![CDATA[I need a vacation. The single mom thing has been getting to me lately. I would imagine a lot of you read my blog and think I have a perfect life, or that I&#8217;m trying to make you think I do. The truth is, I take many a photograph around here after I just shoved crumbs or unfinished homework out of the way to take a picture. My life is messy. And most days I wonder how I&#8217;ll ever be enough. In a few years, my oldest will be leaving the house, and I wonder if he&#8217;ll ever know what stability actually feels like. I worry I&#8217;ll never get everything together . . . or not even everything! I&#8217;d be happy happy with just having a few things together! Like my laundry, for example. I think I&#8217;d like to actually get it all folded one of these days . . . that would be good. I keep stumbling upon articles that talk about how stress makes it hard to lose weight, and then they go on to make suggestions about eliminating things that stress you out!! That&#8217;s when I break into a manic laugh. Oh right!! I&#8217;ll just cut back on my stress!! Why didn&#8217;t I think of that before!! Hahahahahahaha!!!!!! Oh, I&#8217;m fine. I&#8217;m fine. 		<description><![CDATA[When I was in Elementary school, a girl in my class brought in meringues her mother had made. They were white on the outside, but when you bit into them, you found M&#38;Ms hidden inside. My nine-year-old self could not believe how amazing they were. I made my chocolate meringue kisses ages ago to be like those M&#38;M meringues, but these white ones are a simpler version. They&#8217;re just about as simple as you can get, but the possibilities are endless. You can mix in candies, pipe them into different shapes, swirl in colors, or flavors . . . you can do just about anything. We made this simple version when my kids were hounding me to make Eton Mess, a favorite dessert of ours that requires crumbled meringues, which you can find here. To make them, all you need are a few egg whites, some sugar, cream of tartar, and a little bit of vanilla. vanilla meringues I used a large pastry bag and a star tip (Wilton 1M) to make these into rosette shapes, but if you don&#8217;t have either of those things, you can simply spoon them out onto the parchment paper. 3 egg whites at room temperature 3/4 cup granulated sugar (superfine sugar would be ideal) pinch of cream of tartar 1/2 teaspoon pure vanilla extract 1. Line two baking sheets with parchment paper. In the bowl of an electric mixer fitted with the whisk attachment, beat the egg whites until frothy. With the mixer on medium-high, add in sugar, a tablespoon at a time. When all the sugar is added, whisk in the cream of tartar. 2. 		<description><![CDATA[I&#8217;m sure you&#8217;ve been just as busy as I have been, but here&#8217;s just a quick something-or-other to add to your Christmas cookie boxes. They&#8217;re like eating pure evil. peanut butter brownies I used this recipe at epicurious for a starting point. 6 tablespoons unsalted butter 1 cup high quality semi-sweet chocolate chips 3/4 cup granulated sugar 1 teaspoon pure vanilla extract 1/4 teaspoon salt 2 large eggs, lightly beaten 1/2 cup unbleached all-purpose flour for the peanut butter layer: 1 cup smooth peanut butter (all-natural is fine) 1/2 stick (4 tablespoons) unsalted butter 1/2 cup powdered sugar 1/4 teaspoon kosher salt 1 tablespoon heavy cream for the chocolate layer: 1 1/4 cups high quality semi-sweet chocolate chips 3 tablespoons unsalted butter 1. Preheat oven to 325ºF. Line an 8 x 8 inch baking pan with an 8 x 14 inch of parchment paper. Clamp down overlapping paper to the sides of the pan with metal bulldog clips or binder clips to keep it from falling into the batter. In a large microwave safe bowl, microwave chocolate chips and butter on high for 30 seconds. Stir. Repeat until chocolate is fully melted. Stir in sugar, vanilla, salt, and eggs. When the batter is smooth, carefully whisk in the flour, and stir until just combined. Pour into prepared pan. Bake for 30 minutes or until toothpick inserted into the center comes out clean or with a few sticky crumbs. Let cool completely. 2. 		<description><![CDATA[Wow, I may have just broken a record. I have made bake sale week last nearly a full two weeks this year. I just ran out of days faster than I could bake cookies, apparently. Time has been going by so fast lately. In fact, my kids called me from school last Friday, reminding me to come get them because it was early out, and I was late. I never even realized it was Friday until they had called. Anyway, here I am, with one last recipe. My favorite brownies showed up in 2008. They use an entire bag of chocolate chips, and are the easiest thing in the world to make. But sometimes, you just don&#8217;t have a bag of chocolate chips in the pantry. You may have thought you did, but when you go to find it to make the brownies you have just set your heart on, you may discover it has been nibbled down to about a half a cup&#8217;s worth by your sugar-addicted-nine-year-old (not that I would have any personal experience with that). That is what some would call a chocolate emergency. And that&#8217;s why I&#8217;ve posted these brownies. Sometimes, you just have to have something chocolatey, even when you don&#8217;t have any actual chocolate in the house. Since this recipe uses cocoa powder, and no additional chocolate, it&#8217;s the perfect answer to a chocolate shortage crisis. This recipe makes a ton, which is perfect for freezing. 		<description><![CDATA[I told you about these beer and bacon pecan bars by the Beeroness on facebook last week. Since I don&#8217;t drink beer for religious reasons, but since I couldn&#8217;t stop thinking about these amazing cookies, I decided the only thing I could do was make my own. It was important to uphold the complexity of flavor that the stout in her recipe provided though, so I opted to make the entire recipe with pure maple syrup, and not use brown sugar or corn syrup. Now, I&#8217;m not gonna lie to you&#8212;these things ain&#8217;t cheap. By the time I finished buying all the ingredients for these&#8212;Niman Ranch bacon, pure maple syrup, maple sugar, and pecan halves&#8212;I had spent at least $20. So, you might want to bring those marshmallows to your bake sale or even those s&#8217;mores bars, and keep the maple bacon bars for yourselves. You can probably tell from my picture, I&#8217;m still a little challenged in getting the cookie part of a pecan bar to stay on the bottom. For whatever reason, the goo always mixes with the cookie. So when you make yours, I wish you the best of luck, but please don&#8217;t yell at me if yours come out sticky on the bottom. They&#8217;ll still taste good.
