Found you via Pinterest. Made the cookies today using the altered version. The texture was wonderful and they baked up nice. I thought the honey added a weird aftertaste, BUT I’m not fond of honey, so that’s likely a personal preference. I preferred a more lemony flavor, so I also made a lemon glaze to coat rather than powdered sugar.

I made a glaze with lemon juice and powdered sugar instead of rolling them in powdered sugar. Pretty good. more are in the oven.

Making these for after dinner now – I chopped up some pecans, and have about 1/2 cup of coconut in the pantry, so threw that stuff in there – can’t wait to see how they turn out!
